Lovely richness on the palate with some grapefruit and nectarine flavours and clever balance of acidity and a touch of phenolics to extend the length on the palate.  Wild Ferment: We don&#x2019;t add any cultured yeast!  The fruit is hand picked, whole bunch pressed, allowed to settle over night before being transferred to barrel, fermentation started spontaneously about 3 days later, the wine was monitored throughout fermentation, and once complete the barrels where sulphured and topped and left to mature for 9 months before blending, filtration and bottling.
